Recently we hit the road for a nearly 2 week adventure. Six nights on the road, five nights at the snow and six bellies to feed. The goal was simple: nutritious food that was easy enough to prepare while away from my kitchen and that everyone would eat.

Thermomix at the Snow: What We Cooked for Our Family of 6

The days before we hit the road, the boys and I sat down with Cookidoo and worked out what we could make ahead, freeze and take with us.

Our goal was simple: make the days on the road as easy as possible. With three nights and four days of travel ahead of us, we wanted lunches, dinners and snacks that could be pulled from the freezer and enjoyed with minimal effort.

And, of course, we wanted food that was delicious too!

Food for the Journey to the Snow

We had three nights with many hours of driving to get to the Victorian high country from warm Queensland. I knew we would get in most evenings late and ready for bed, so I wanted to make the dinners simple, the lunches pre-made and snacks accessible. 

Lunches

  • Zucchini Slice – my easy version of this classic

  • Spinach, Tomato & Goat’s (Cream) Cheese Quiche – from our July Cookalong

  • Quiche Lorraine – made with GF pastry that you can check out here.

  • Sweet Potato Frittata - a great high-protein filling recipe

Dinners

  • Chicken Kievs – leftovers I had frozen from the week before

  • Chicken & Leek Pot Pies - these you must try!! A new fav here!!

  • Shakshuka - a classic that is loved by everyone.

Snacks for the Car

  • Honey Oat Balls

  • Walnut & Coffee Muffins

Breakfast: We Kept It Just Like Home

One thing we didn’t change was breakfast.

We have the same cooked breakfast at home most mornings — bacon, eggs, and Breakfast Circles — so there was no reason to reinvent the wheel!

I prepped enough Breakfast Circles ahead of time for the days we were travelling, then added everything we needed to the grocery list so we could make fresh batches once we arrived at the snow.

Because having my Thermomix with a full kitchen meant we could still enjoy our normal family meals, even when we were away.

Once We Arrived at the Snow

On the final day before heading up the mountain, we placed a big Click & Collect grocery order for the next five days.

We had a full kitchen, our Thermomix and a very hungry family — so we were looking forward to some seriously warming, comforting food!

Here’s what made the menu:

Snack Favourites, all from Cookidoo

  • Chai Masala Tea

  • Hot cocoa - my recipe with just cocoa powder, sugar and milk.

  • Porridge

  • Strawberry Cheesecake Overnight Oats

  • Melting Moments - these were unplanned and inspired by the delicious-looking treats at $9.50, available at the coffee shop near the snow lift. Mr 12 whipped up the biscuits, while I made the buttercream using lemon remaining from the Lala dinner.  

  • Creamy Custard

 

Lunches

  • Vegetable-Filled Sausage Rolls

  • Wraps with leftover mince filling

  • Chicken Curry Wraps

  • Big Mac Wraps

 

Dinners

There was something incredibly satisfying about coming back inside from the cold and knowing we had a kitchen full of ingredients and a Thermomix ready to help us create proper, warming family meals.

And Then… It Was Time to Head Home

Before we left the snow, I did another little bit of preparation for the journey home.

I knew the last thing I’d want after packing up the accommodation was to worry about what everyone was going to eat on the drive, so I prepped a few lunches ahead of time.

 

Lunches for the Road

  • Chicken Curry Quiche

  • Zucchini Slice

  • Sushi - I pre-cooked the rice the night before and the boys assembled it for me

 

Dinners for the road

  • Quick Chicken Tikka Masala with varoma rice

  • Sticky Chilli Beef

  • Carbonara

And for the car, we kept it simple:

  • Granola with yoghurt

  • Apples & pears

  • Cheese & crackers

The Big Takeaway

This trip was such a great reminder that taking your Thermomix away with you doesn't have to mean taking your whole kitchen with you!

A little planning before you leave, a few freezer meals, a grocery order at your destination and you can eat incredibly well while you're away — without relying on takeaway every night or spending hours in the kitchen. 

And with the boys helping me prep and choose recipes, it became part of the adventure too.

Good food, less stress and a very happy family — even when we're miles from home.
